The Bria Continental breakfast always includes a collection of freshly baked treats to start the day off right. At Sunridge Gardens Seniors Community in Langley, Sous Chef Danielle Armfelt makes an Earl Grey Date Cake that gets rave reviews from residents. It’s moist and rich, and you’re advised not to drown out those delicate Earl Grey notes with your cup of coffee—perhaps sip some Early Grey instead!
2 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 cup unsalted butter
1 1/3 c sugar
2 tbsp (5 tea bags) loose Earl Grey tea (substitute your favourite black tea)
1 tbsp vanilla
5 eggs
1 cup chopped dates (or use raisins, nuts, or another dried fruit)
Mix dry together flour, salt, baking soda in a small bowl.
In a large bowl, beat together butter and sugar.
Add loose tea leaves and vanilla and mix until fluffy.
Add eggs one at a time beating well after each one.
Gradually add flour until fully combined.
Fold in dates.
Bake in a greased loaf pan for one hour at 350 degrees.
Suggestion: make a glaze by gradually adding tablespoons of brewed tea to sifted icing sugar until you have the consistency and amount of glaze you desire.
