This August, the South Delta Jazz Festival and Southlands Grange are hosting the Jazz at Southlands concert, and Bria Communities is proud to be cooking up a New Orleans-inspired feast for concert-goers to enjoy.

Saturday, August 13, the music takes centre stage with a free concert from 5-8 pm in Market Square in Southlands Tsawwassen. Those who want to enjoy a meal inspired by the music will love the spread Chef Matthew Baryluk, Executive Chef at The Waterford, is cooking up.

“It’s all about the jazz, so I instantly knew we needed to go with a Creole-style menu,” says Chef Matt. He started his career on the East Coast of Canada, earning a Diploma in Culinary Arts and his Red Seal Certification. After working in various fine dining establishments in Nova Scotia, he made his way out west and has been Executive Chef and Culinary Manager at The Waterford Senior Living Community in Tsawwassen since 2020.

Chef Matt’s Jazz in Southlands menu features hearty Louisianan-style jambalaya: smoked andouille sausage, shrimp, peppers & onions in a rustic tomato sauce served over Creole-seasoned steamed rice. “The way the flavours play together kind of echoes a jazz riff. It feels like something you’re going to eat in a French Quarter Café,” says Chef Matt.

Grilled chicken skewers with a sweet and smoky bbq sauce are also available, and the Britannia Brewing Company will be on-site in the beer card featuring select beers, BC local wine and soda.

The music is free, but registration through Eventbrite is a must. Participants who want to enjoy Chef Matt’s Creole feast along with their jazz can also register and pay for their food in advance. Walk-ins will be welcome, but there will be a limited amount of meals available for those who don’t order. First come, first serve.
